Refreshing dessert recipes for Diwali


Diwali Recipe 1
Nuts and More

100 gms almonds ( diced)
100 gms walnut kernels broken into small pieces
50 gms kishmish
1/2 kg khoya
sugar to taste ( approx. 100 gms )
2 tablespoons ghee


Roast the almonds and walnut kernels lightly and place them aside.Soak the kishmish in warm water so that it becomes soft.Drain out the water and keep aside.
In an open vessel like kadai put the ghee and once warm put the khoya in. After it softens add the sugar and mix well.Continue to stir with a steel spatula till sugar is dissolved and khoya turns light brown. Now add the kishmish and stir again.Remove from the fire.Once the mix is cooler add the roasted almonds and walnut kernels

Mix well taking care not to break the almonds and walnuts into crumbs.
Make into small balls and place in a flat dish.
Makes about 10-15 balls of small size

Diwali Recipe 2
Pumpkin Halwa

2 kg yellow pumpkin.
3-4 tablespoons ghee
Sugar to taste ( approx. 150 gms sugar )
50 gm Melon seeds /watermelon seeds

Peel the pumpkin and cut into 2 inch pieces.Take a large kadai and put ghee .When warm put the washed pumpkin pieces and cook along with sugar Cover with a lid for about 10 mins on a low flame.Remove the cover and mix well .With a flat spatula keep stirring the mix until pieces are now a paste with strands.Put a strand of kesar and mix well to give it streaks .Do not let it stick to the vessel.With continuous folding in and browning watch out for the perfect light brown colour .Once cooked place in a shallow dish and spread the mix.Sprinkle the Melon seeds on the spread so that they stick to it .

Serve hot or if cooled then in pieces like barfi.
